Short answer: a ribeye runs about $4.17 per ounce across 22 metro Phoenix restaurants, so a 16 oz bone-in lands near $66.72. A filet is about $6.92/oz — roughly 66% more for the same weight, which is the single most expensive habit on a steakhouse menu.
The cheapest ribeye we found is $2.40/oz — Wrangler Bone-In Rib Eye, 20 oz for $48.00 at Rustlers Rooste. The most expensive cuts in town run past $40/oz once you get into A5 wagyu.
The cut. Filet is the priciest common cut by weight and prime rib the cheapest. The size. Small portions cost more per ounce everywhere — an 8 oz petite filet is routinely 20–30% worse per ounce than the 18 oz version of the same steak. The room. An upscale steakhouse and a casual grill can charge the same per ounce; the difference usually shows up in the sides, the wine and the $19 wedge salad, not the beef.
